I’ve never understood people who try to make “healthy” garlic mashed potatoes, the kind of mashed potatoes that are so dry you need to douse them in gravy for it to taste palatable. Clearly the Wordloaf Dinner Garlic Mashed Potatoes are good because we all know Tom Wolfe has excellent taste in mashed foods. My garlic mashed potatoes need no gravy because I add a lot of garlic, butter, sour cream and salt and pepper, like a real writer.

Ingredients:

  • Russet Potatoes
  • Butter (1/4 cup)
  • Sour Cream (1/4 cup)
  • Head of Garlic
  • Salt and Pepper

Directions:

Skin the potatoes and chop into small cubes. Add to boiling, salted water until the potatoes are soft. Meanwhile, cut the top portion off a head of garlic and add a small amount of oil, water and salt and pepper. Wrap in tin foil and place in the oven (at 350 F) for approximately half an hour. Keep an eye on the garlic! It will burn if not monitored.

Peel the skin off the cooked garlic and mash before adding to potatoes. Drain potatoes and lightly mash before immediately adding garlic, butter, sour cream and salt and pepper. I don’t make garlic mash in any kind of recipe-like way. I mostly just add ingredients to taste. If the mashed potatoes taste delicious and unhealthy you have achieved what you are looking for.

My only issue in making this recipe is that my plate of mashed potatoes wasn’t big enough. I think next time I need at least twice as many potatoes for this really to match the amount that Tom Wolfe was going to eat.
